Mary’s Christmas Pudding
It's not too late to make your own Christmas pud!
To make a 2lb pudding - enough to feed the whole family
110g of shredded suet
25g whole candied peel (finely chopped)
25g whole Almonds (skin on is ok)
1 small cooking apple (cored and finely chopped)
Zest of half a large orange
Zest of half a large lemon
2 tablespoons of brandy
75ml barley wine
2 large eggs
50g self-raising flour (sifted)
1 teaspoon mixed spice
Pinch of nutmeg
Pinch of cinnamon
225g soft dark brown sugar
Handful of glacier cherries
Ideally make as early as possible, and at least one day before steaming!
Evenly mix all dry ingredients, then add the eggs and booze - stir well. Leave overnight. Steam for 2.15 hours - Or pop into the GA and buy a mini one!
