Goan Curry Paste - A Recipe from Nick

Make your own Goan curry paste at home.

INGREDIENTS

1 x teaspoon of Cumin seeds

1 x teaspoon of black peppercorns 

2 x teaspoons of coriander seeds

1 x teaspoon of cloves

1 x teaspoon of Turmeric powder

100g x fresh red chillies

1 x teaspoon of sea salt

6 x garlic cloves

1 x teaspoon of light Muscovado sugar

1/4 x tablespoon Tamarind Water

1 x 5cm fresh ginger

2 x tablespoons of red wine vinegar

1/4 x tablespoon of vegetable oil

METHOD

Heat a dry heavy-based frying pan over a low heat. Lightly toast the cumin and coriander seeds with the cloves and then add Turmeric. Pour the toasted ingredients into a food processor and blend to a fine powder.

Roughly chop up the chillies and ginger and crush the garlic. Add these to the dry ingredients. Add all other ingredients and blend into a paste.
